BLACK SALSIFY MASH

Some studies have shown that the leading cause of hair-loss in pre-menopausal women is a lack of iron. Salsify is a winter root and super-tuber, a highly nutritious vegetable, that is particularly good for hair growth as it contains high levels of iron, copper and also vitamin C. Iron is needed by the body to carry oxygen in the blood to the scalp. Copper is known for keeping the greys at bay and maintaining hair strength as well as promoting hair growth. Vitamin C aids the absorption of iron and is needed for the formation of collagen which keeps our hair follicles strong. So, when salsify is in season, be sure to grab a bunch to cook with.

300 g/10½ oz. black salsify root

1 tablespoon chopped fresh flat-leaf parsley (optional)

1 tablespoon butter or ghee

sea salt and black pepper, to season

a large bowl filled with water and ½ lemon squeezed in

Peel the skin off the salsify and chop the flesh into 2.5-cm/1-inch pieces. Add the salsify to the prepared citrus water bowl as you prepare them. Leave to sit in the citrus water for 5 minutes – this helps to stop discolouration.

Drain the salsify, then put in a saucepan. Cover with water and set over medium heat to boil for 10–15 minutes, until soft.

Drain and return to the pan or a large mixing bowl. Sprinkle over the chopped parsley, add the butter and season with salt and pepper. Using a fork, roughly mash the salsify – you can make this as smooth or chunky as you like.

Serve hot as a delicious and healthy side dish.
